Directions:

Put all the ingredients in a blender and mix until it’s well blended. You may have to keep adding ice until you get it to the perfect consistency, but once you’ve found it, you’ll be rewarded with a tasty and healthy drink.

Chicken and Mandarin Salad

This salad is healthy, tasty and light. It will give you 18 grams of protein per serving, 200 calories and only 16 grams of carbohydrates.

Ingredients:

  • 3 ounces grilled chicken
  • 1 cup broccoli
  • 1 red pepper
  • 1/2 cup mandarin orange
  • 2 cups spinach
  • ⅛ cup orange juice
  • teaspoon of lemon juice
  • teaspoon of red wine vinegar
  • teaspoon of Dijon mustard

Directions:

In order to prepare this salad, the chicken must be cut into strips. After cutting up the grilled chicken, toss the broccoli, red peppers, spinach and mandarin orange together. In a smaller bowl you combine the Dijon mustard, red wine vinegar and lemon juice.

Once the salad is tossed to your liking and the dressing is mixed well, you can add the dressing to the salad and enjoy. This is a flavorful lunch that will keep you satisfied until dinnertime

Flounder Burger

This recipe is great if you want to have something that can be made before hand and just placed on the grill or in the frying pan when you are ready to eat it. It contains 76 grams of protein, around 60 grams of carbohydrates and 540 calories per serving. If you have a big appetite this healthy meal will definitely satisfy you.

Ingredients:

  • 6 ounces of flounder
  • ¼ cup quinoa
  • 1 tablespoon of chia seeds
  • Kale as a topping for sandwich
  • Cucumber
  • Hamburger Buns
  • Jalapeno (optional)
  • 1/2 tablespoon of mayonnaise (you can use light mayo or vegan mayo)
  • 1 clove of garlic
  • Bread crumbs (regular or whole wheat)
  • Curry, salt, pepper, lemon juice (optional)

Directions:

The quinoa should be cooked for 15 minutes and you can add salt, pepper and curry (add these latter ingredients to suit your taste). The flounder should be cooked for one minute on each side. You can use a cooking spray to lightly fry the flounder. Before frying the flounder, preheat the oven at 425 degrees.

The flounder, quinoa, chia seeds, garlic clove, kale and bread crumbs should be placed into a bowl. At this point, you can add more salt and pepper to suit your taste. These ingredients should be made into a patty and then placed into the oven for up to 10 minutes.

It’s important not to leave the patties for longer than 10 minutes because you don’t want to overcook them. While the patties are cooking, dice the cucumbers and jalapenos (if you are using them). Mix those ingredients with the mayonnaise and lemon juice and toast the hamburger buns.

You can take the patties out of the oven or off the grill and put them in the bun and add the cucumber mixture. This hearty and tasty meal is good for lunch or dinner.
